LETS EAT (IF YOU ARE NOT ON A DIET)






Well, I asked Janet to make some bean soup and bring me some, but I still havent seen her, so I had to make something myself.
I know a lot of you are dieting, believe me I am the one that should be on a diet, more than anyone.
VERY HUNGRY
So I made
LAZY STUFFED CABBAGE CASSAROLE
2 lb. ground beef

1 C. minute rice (uncooked)

1 pkg. onion soup mix

2 (8oz) cans tomato sauce

1 tomato sauce can water

1 can stewed tomatoes

2 lb. cabbage (coarsly chopped)

Brown ground beef & drain, mix rice & soup mix in ground beef. Mix all together and pour in 9x13 pan, cover with foil and bake 1 1/2 hours at 350









Well that didn't satisfy me so I made


JALAPENO CORNBREAD MUFFINS
3 C. selfrising corn meal
1/2 C. oil
3 eggs (beaten)
1 onion (grated)
1 C. cream corn
1/2 C. Jalapeno peppers (chopped)
1 1/2 C. grated cheese
1/2 C. chopped pimentos
1/2 t. garlic powder
Enough buttermilk to mix. called for 2 1/2 cups but I didn't measure. I think that is too much.
Mix all ingredients and bake at 400 for 35 to 40 Minutes.


DO YOU EVER COOK AT 11:00 O-CLOCK AT NIGHT?

Vera, so glad to see you posting again. These sound really good. And no, I don't usually cook a big meal at 11 o'clock at night. But I have been known to eat at 11 o'clock at night. Looks like we need to put together another family cookbook.

Vera~Thank you for visiting me and for the encouraging words! They mean alot to me...especially during the tough time before me...the weekend!!
And then I stop over to visit you and what do I see!...The most delectable casserole and muffins! My mouth is watering so much! I'm sure that it wouldn't be too bad if I just ate a small bowlfull and one muffin!
My stomach just growled!
I better leave this blog and visit a blander one!

Oh boy you just made me hungry. My husband would love the casserole, he is Hungarian.
